🎀 WHAT IS AN ALFAJOR?

A Peruvian Alfajor is a traditional Peruvian sandwich cookie made with soft, crumbly cornstarch biscuits (maicena) and filled with rich, creamy manjar blanco. Peru’s version of dulce de leche.

The use of maicena (cornstarch) is what makes this alfajor extra delicate. It gives the cookies their signature texture:
